Everybody loves pizza. I mean c’mon…its pizza. Give this super-simple, tasty cauliflower crust pizza a try!
So, I haven’t posted in a week. Sorry about that guys. I definitely didn’t mean to shady bounce on you, but this week I’ve been stuck doing all the homework there ever was to do. Don’t worry though, I will survive. This is all sounding a little dramatic. Welcome to my brain.
On a brighter note, happy Friday! My boyfriend refers to every Friday as “Pizza Friday” for no other reason than Friday = Pizza. Yeah, I don’t know either.
A few weeks back, I was in fridge-cleaning mode preparing for the move and had some extra cauliflower that needed to be used up. I also wanted pizza really bad. Since 2+2 = 4, I whipped this bad boy up real quick. For some reason I felt compelled to post a horribly lit picture of it on Instagram and Facebook (give me a follow if you aren’t already!) and to my surprise – lots of people wanted the recipe despite the sad little photo.
Speaking of photos, I’m really loving the creative process of putting together a dish, styling/taking the photos, editing and then posting it for all you fine people. It’s a TON of work, but it’s fun work and I really enjoy the whole process. Except all the dirty dishes. I’ll pass on those. There are so many things I want to create and share, but not enough hours (or sunlight) in the day to do them all as fast as I’d like. So for now, I will just redeem myself from that terrible yellow-kitchen-light pizza photo taken with my phone….
It’s actually super simple – a seasoned crust made from cauliflower with the toppings of your choice baked to cheesy, pizza perfection. On my original I had cheese, olives and turkey pepperoni which were delicious. Today I rolled with just cheese and basil because padre ate the rest of the pepperoni. Such is life. But any toppings (including my Sriracha BBQ Chicken toppings) would be wonderful.
- 1 Small Head of Cauliflower, chopped into pieces (~3 Cups)
- 1 Egg, whisked
- ⅓ Cup Grated Mozzarella Cheese
- 2 Tablespoons Flaxseed
- ¼ Teaspoon Garlic Powder
- ¼ Teaspoon Oregano
- Salt and Pepper
- Toppings: Your favorite pizza sauce, cheese, veggies, etc.
- Preheat oven to 400F.
- Cover a baking sheet with parchment, and lightly spray with olive oil spray. Set aside.
- Pulse the cauliflower in a food processor until it's a rice-like consistency.
- Put the cauliflower in a microwave safe bowl, and cook in the microwave for 8 minutes. Allow to cool.
- Place the cauliflower onto a clean kitchen towel, and wring out to dry. You want to remove as much of the water as possible - this is key for getting the right texture.
- When the cauliflower is dry, place in a medium bowl and combine with grated mozzarella, egg, flax and seasoning. Mix well until combined.
- Transfer the cauliflower mixture onto a baking sheet, and press into a thin, even layer and spray a touch more olive oil.
- Bake for 10 minutes, until golden brown.
- Remove from oven and add additional toppings. Return to the oven for an additional 5-6 minutes until cheese is melted and toppings are warm. Broil for 1-2 minutes so the cheese can get nice and bubbly.
- Slice and serve.

Pizza Friday is a MUST in my apartment. I’m doing Whole30 right now and when I told my boyfriend what it entailed he was like, “ohhh so no more Pizza Fridays?”. So like the loving girlfriend I am, I got pizza dough and had one last pizza before I started hahah.
And also dishes are probably the worst part of any food blog. Just negotiate a deal with your tastetester (boyfriend) to do them for you!

I want to make this, but don’t have access to falx – what do you recomend as a sub? Maybe some rice flour?? Hubbie is GF.
Hi Jen! The flax helps bind, so in this case you could try adding a little more cheese or perhaps an additional egg to help it hold together.
Love this, but what if you want to avoid the dairy. Any ideas for a crust without cheese?
Hi Lorraine, you could try adding additional flax and/or chia and including something like almond meal to bind the crust. I haven’t tested these though, so I can’t guarantee they will work.
