This cilantro lime cauliflower rice is a delicious way to get more veggies in your diet, and it comes together in just a few minutes!
I’m surrounded by people who hate grocery shopping. I am the total opposite – I absolutely love grocery shopping. I’m not a quick shopper when it comes to food either. I like to go up and down almost every aisle of the store, looking at new ingredients and getting ideas for new recipes to try. That’s my idea of a good time.
One of my favorite places to do this is Trader Joe’s. There are always fun new products to try that I can actually afford. Plus to quote my mom, “Trader Joe’s is great because they take the most pain in the ass foods to prepare, and make them easily accessible for you.”
Touché, mom. Case in point: their new frozen riced cauliflower.
When I saw this gem in my local TJ’s, I immediately got excited and bought several bags. It’s not that ricing cauliflower myself is hard. Opening up a bag and pouring it into a pan is just so easy.
Once I got my hands on this riced cauliflower, I know exactly what I needed to make – cilantro lime cauliflower rice.
This cilantro lime cauliflower rice is flavorful, easy to make and the perfect base for any burrito bowl. If you don’t have a TJ’s nearby, you can totally just give cauliflower florets a whirl through the food processor or grater and you’re in business. That may take this cauliflower rice into the 12-13 minute territory, but I promise it’s totally worth it.
- 2 Tablespoons Avocado or Olive Oil
- 1 Bag of Riced Cauliflower, or 1 Small Head of Cauliflower Pulsed in the Food Processor
- ½ Shallot, Chopped
- 1 Clove of Garlic, Minced
- ¼ Cup Chopped Cilantro
- Juice of 2 Limes
- Salt and Pepper to Taste
- If your cauliflower is not already pre-riced, place chopped cauliflower florets in your food processor and pulse several times until reaching a rice consistency. Set aside.
- In a large pan, heat oil over medium heat and add diced shallot. Sauté until soft.
- Add garlic, cauliflower and salt and pepper. Cook until cauliflower is softened and heated through - about 5-7 minutes.
- Remove from heat and stir in lime and cilantro.
