Let’s face it, nut butter is crazy expensive – so make your own! This sweet almond butter blend comes together in minutes and is perfect with fruit, on toast or in smoothies.
I just haven’t been into cooking lately. Yeah, I said it.
I still love cooking. I super love eating. But lately, I’m just not feelin’ spending a ton of time in the kitchen. Maybe it’s the heat. Or maybe I’m lazy. I’m thinking it’s a combination of both. Let’s just say there has been a lot of brinner / smoothies / sandwiches going on. A few weeks ago at work I even brought a PB&J for lunch. Am I 5? Perhaps.
That’s not to say I haven’t still been experimenting, I’ve just been experimenting with my blender / food processor. Not the stove. I just can’t do it. Ok, I lied. I actually did make an epic meal for myself the other night that I shared on Instagram. So you’ll be seeing that soon.
But besides that, there’s been less cooking and more blending overall. One of my favorite blends as of late? DATE CARAMEL.
I have made date caramel before (and used it as a filling in these cookies) but it’s been awhile and I forgot how delicious it was. During my blending frenzy, I needed some more almond butter in my life. However, since I’m not made of money I can’t always buy store-bought almond butter to keep up with my cravings (or sandwich making).
Then I realized, almond butter + date caramel = ooooohhhh yeahhhh.
This recipe is crazy easy, I almost don’t even want to call it a recipe. But I did anyways, because I’m a rebel like that. It only has three ingredients and is as easy to make as 1-2-3.
Plus, this almond butter is like 10,000x healthier than other salted caramel goodies. Check it:
- Almonds are a great source of Biotin (for gorgeous hair), Vitamin E, Protein and Healthy Fats the help lower LDL-cholestorol levels
- Dates are rich in Magnesium, Fiber and Potassium
- No refined sugars
Ok, and maybe I lied twice. I did use the oven for a few minutes with this recipe, but it was only for a few minutes. I promise it’s worth it!
- 2 Cups of Raw Almonds
- 1 Cup of Pitted Dates (make sure your dates are soft, or soak them in warm water for ~10 minutes)
- Generous Dash of Sea Salt
- Preheat oven to 350F.
- Spread almonds on a baking sheet and bake in the oven for 7-10 minutes, or until lightly toasted.
- If your dates are not already soft, place them in warm water to soften for a few minutes, then blend in a blender or food processor until they form a sticky paste. If the dates are difficult to blend, add warm water one tablespoon at a time until well blended (I used about three tablespoons of soaking water). Add sea salt and blend until combined. Place in separate bowl and set aside.
- After the almonds have roasted and cooled slightly, transfer to the food processor and blend until smooth. It can take several minutes for the almonds to break down into butter depending on the strength of your food processor.
- Once the smooth, almond butter has formed stir in salted date caramel mixture. Don't overmix, as you want there to be swirls of the caramel. Garnish with additional salt if desired.
- Store in a sealed container in the fridge.
