The holiday season is fast approaching. And by holiday season, I mean cookie season.Β
Cookies were one of the first things I learned how to whip up in the kitchen on my own. Growing up, my mom had a killer peanut butter cookie recipe that my family loved. I learned how to make it at a young age and baked them all the time – usually at the request of my brother who LOVES cookies. Β To this day, a batch of cookies is my favorite thing to make. Baking is super relaxing to me, plus when you’re all done you get to eat cookies. What’s better than feeling relaxed, eating cookies? Nothing, my friend.
If you aren’t (yet!) very comfortable in the kitchen, or don’t usually enjoy baking because it’s too fussy, this is the cookie recipe for you. It is incredibly simple with just 5 ingredients. Oh, and the cookies are gluten-free, flourless, paleo friendly and taste AMAZING. So there’s that.
I used cashew butter as the base for these little pieces of heaven, but you could use any nut butter you’d like! Almond butter would yield a similar result as cashew butter. Peanut butter would also be delicious, but be aware that the stronger flavor would turn them into peanut butter-chocolate chip cookies instead of traditional chocolate chip cookies.
You should put this on your list of treats for upcoming holiday baking because they are soft, melt in your mouth, and are way more satisfying than your standard cookie thanks to the cashew butter. So grab your ingredients (you probably already Β have them on hand!) pour yourself a nice cold glass of almond milk, and get ready to be in cookie heaven. πͺπͺπͺπͺπͺ
- 1 Cup Salted Cashew Butter*
- ½ Cup Coconut Sugar
- 1 Large Egg
- ½ Teaspoon Vanilla Extract
- ½ Cup Dark Chocolate Chips (I used Enjoy Life brand to keep things dairy free)
- *If you have unsalted cashew butter, add in a dash of salt to the cookie dough.
- Preheat oven to 350F. Prepare a baking sheet with parchment paper or a silicone mat. Set aside.
- In a large bowl, combine the cashew butter, coconut sugar, egg and vanilla. Mix until well combined and a soft dough forms.
- Fold in chocolate chips until well-mixed. If the dough is too soft to form into cookies, place in the fridge for 10-15 minutes to firm up.
- Using a cookie dough scoop or a tablespoon, form dough into balls and place on the cookie sheet and gently flatten.
- Bake for 10-12 minutes, or until golden brown. Remove from oven and allow to cool.
- Store in an airtight container in the fridge.

Thanks so much Robin! What ingredients can’t you find? Cashew butter is really easy to make (simply roast and grind cashews) and coconut sugar can easily be substituted for brown sugar. Hope that helps!

Any cookie made with a nut butter is a must have! I love peanut butter too so I’m don’t mind the “peanut butter chocolate chip cookie” π I wonder if Trader Joe’s cookie butter would work for this as well?
The peanut butter version would be amazing too! As for cookie butter, I wouldnt recommend it as a direfr substitute. Its made mostly from sugar and doesnt have the same properties as nut butters which are mostly composed of fats. However if you made some tweaks (perhaps added flour of choice and baking soda?) cookie butter could work! Let me know if you give it a try π
