Happy Friday! I know I say that every week, but this week I am especially glad it’s the weekend. Between work being crazy, getting sick and FINALS WEEK…this week has been pretty all over the place. I am more than ready for some relaxation, Christmas shopping and not studying.
Oh, and I have the perfect weekend breakfast planned for you – I’ll get to that in a bit. But first, how about some Friday favorites?

Alright, now about that oatmeal…
A few weeks back, after going to the dentist I was hankering for a cinnamon roll (random I know). I didn’t quite feel like dealing with the inevitable stomach ache and sugar crash of an actual cinnamon roll (and couldn’t actually chew after going to the dentist) so I whipped up this oatmeal to satisfy my craving which to my surprise was actually amazing and tasted very much like the real thing. Bonus: it packs nearly 20 grams of protein without using any protein powder or funky ingredients. Give it a try this weekend!
- 1/2 Cup of Rolled Oats
- 1/2 Mashed Banana
- 1 Cup Milk of choice (I used almond)
- 2 Egg Whites or 1/3 Cup Liquid Egg Whites
- 1 Teaspoon Vanilla Extract
- 1 Teaspoon Almond Butter
- 1 Teaspoon Real Maple Syrup
- 1 Teaspoon Cinnamon
- 1 Wedge of The Laughing Cow Cinnamon Cream Cheese, or 1 Tablespoon Light Cream Cheese
- In a saucepan over medium-low heat, bring milk to a simmer.
- Add oats, vanilla and mashed banana, stir well.
- Once most of the milk is absorbed, add in egg whites stirring continuously until they are all mixed in and your oats are fluffy.
- When oats are done, transfer to a bowl and stir in cinnamon roll topping ingredients.
- Swirl in cream cheese as icing if using.
- To make this in the microwave combine oats, milk, banana, vanilla and egg whites in a large bowl (don't use a small bowl or the oats will overflow). Microwave for ~60 seconds, then stir well. Continue cooking in 30 second increments until done.
