I made you a fun summer treat! This Key Lime Pie Chia pudding is a little tart, a little sweet and absolutely delicious.

So this is my first adventure making blended chia pudding. I’ve seen it on Pinterest for ages now, but I normally like my chia pudding good and seedy. Those little gelatinous slightly crunchy bits of sweetness…mmmmm. Talk foodie to me. But curiosity got the best of me, and I really wanted to see what all this blended ch-ch-ch-chia business was all about. Plus, I realize the traditional chia pudding texture may not be for everyone. So I did a little experimenting.
The result? This key lime pie flavored goodness.
I love chia seeds. I first had them back in college, when I went vegan (for a hot second). One of my professors whom I babysat for was a vegetarian, and she gave me some hemp seeds to try when I stopped eating meat. Little did she know, she created a seed-loving monster as hemp seeds were the gateway to several others. For the last few months of college I rubbed my pennies together to get as much hemp, flax and chia I could get my hands on. Although I’m no longer vegan, I still include seeds in my daily diet.
Haven’t had chia seeds yet? You should definitely give them a try! They’re an awesome source of omega-3 fatty acids which support brain and heart health. They are also packed with fiber and protein. Long story short, if you haven’t tried these guys yet, you should give them a go! Ok, let’s make pudding.
You could let the ingredients sit overnight and quickly blend in the morning for a grab-and-go breakfast. Or you could do like I did and get a little more decadent with coconut whipped cream and crushed graham crackers for a refreshing dessert. Oh you fancy huh?
- ¼ Cup White Chia Seeds (black will also work, but it may change the color)
- 1 Cup Unsweetened Almond, Cashew or Coconut Milk
- ½ Teaspoon Vanilla Extract
- 3 Tablespoons Fresh Lime Juice
- ½ Teaspoon Lime Zest
- 2 Tablespoons Honey or Maple Syrup
- 1 Cup Fresh Spinach
- Optional Toppings:
- Coconut Whipped Cream
- Crushed Graham Crackers
- Whisk together the milk and chia seeds in a medium bowl. Cover and allow to refrigerate for a few hours or overnight, until the seeds have absorbed most of the liquid.
- In a high-speed blender, blend the chia mixture, vanilla, lime juice, zest, honey and spinach until well combined.
- If desired, place in the fridge to chill before serving.

I love chia pudding but I’ve never tried it blended before. This looks amazing! I love the vibrant color and sneaky veggies. This is a perfect swap for my usual morning overnight oats <3
