I’m all about acronyms, and have to refrain from using them on the blog. Some acronyms I use are legitimate and commonly used. Most of them I make up in my head, say in everyday conversation, then get some crazy looks because people have no idea what I’m talking about.

My favorite acronym is very common – KISS. Also known as keep it simple, stupid. I think we can all use a little reminder to simplify things every once and awhile. Ok fine, I need a reminder to simplify things (ie: chill the f out) daily. I have a real knack for making 99.9% of things harder for myself than they have to be. It’s a gift really…a true talent.
This recipe is the definition of simplicity. I love chia pudding, and am always looking for new variations to try. It’s delicious, filling, healthy and super easy to make. Perfect for this time of year as the days get shorter, and schedules get busier.
Plus, nothing says fall like apples with cinnamon (yes I have accepted that fall is coming). Ok, maybe pumpkin spice says fall like apples with cinnamon. But it’s just absurd to start busting out the pumpkin while it’s still August. Let’s not get crazy.
Tonight, whip up a batch of this chia pudding so you have a good breakfast waiting for you in the morning. Keep it simple, stupid.
- 3 Tablespoons Chia Seeds
- ¾ Cup Unsweetened Almond Milk
- 1 Tablespoon Maple Syrup
- ½ Teaspoon Vanilla Extract
- ½ Teaspoon Cinnamon
- Dash of Nutmeg
- ½ Chopped Apple
- 2 Tablespoons Chopped Walnuts
- Combine the chia seeds, almond milk, maple syrup and vanilla in a small bowl or mason jar. Cover and refrigerate for 3 hours or overnight.
- Before serving, sprinkle cinnamon and nutmeg over apple. Microwave for 30-45 seconds until apple begins to soften. Top pudding with softened apples and walnuts. Serve immediately.
