This Broiled Grapefruit is sweet, juicy and bursting with citrus flavor. It is incredibly simple to make, only requiring three ingredients!
Lately, I have been taking a “less is more” approach to just about everything.
After a lackluster 2015, my theme/keyword for the new year is enough. As a slightly crazy type A-minus almost-over-achiever, I have a hard time knowing when to take a deep breath and chill out. So having my theme for the year be something as simple as enough makes me feel really uncomfortable.
Being able to feel as if I have enough, I do enough, I’m good enough and overall am simply enough even though I am used to constantly telling myself to have more, do more, be more is really challenging. Forcing myself to slow down and focus on being good enough as I am is a real mind trip for me. It’s just not natural for me.
Maybe this is how R. Kelly felt when he said his mind was telling him no, but his body was telling him yes. Ok, that’s definitely not what he was talking about. Forget I ever made an R. Kelly reference.
Don’t hate me.
Going along with my enough/less is more mantra, I have another super simple recipe for you. Mostly to apologize to you for bringing R. Kelly into this.
It is time to get your grapefruit on, sister. Right now we are in peak citrus season. That means this lovely tart fruit is on point when it comes to flavor and affordability. Personally, I love ruby red grapefruit because they tend to be sweeter than other grapefruit varieties. The fact that they’re packed with lycopene and vitamin C doesn’t hurt my feelings either.
Sprinkle them with a little coconut sugar and cinnamon and you have pure gold. I know, not the fanciest of recipes, but we’re focusing on enough remember?
Broiled grapefruit tastes great plain, but I couldn’t be too simple here. Remember who you’re talking to. I had to jazz it up a little with a dollop of greek yogurt and a sprinkle of granola for crunch. It is the best combination of sweet, sour, creaminess and crunch. Vegan friends, coconut whipped cream would be all that and a bag of grapefruit too. <– So punny. Killing it today.
- 1 Grapefruit
- 1 Tablespoon Coconut Sugar
- ¼ Teaspoon Cinnamon
- Optional Toppings:
- Greek Yogurt, Coconut Cream, Granola, Shredded Coconut, Nuts, Seeds
- Slice grapefruit in half and sprinkle each half with coconut sugar and cinnamon.
- Heat under broiler until grapefruit is soft and juicy, and sugar has melted. About 4-5 minutes.
- Top with desired toppings and serve immediately.

And this recipe, these photos! Wowsas. It's funny, grapefruit definitely makes me think of the 5th grade, when I tried some ruby red grapefruit (fake) juice drink, and I HATED IT. I'm wondering if now I would like it though… this broiled version is definitely worth a shot! AND, one of my coworkers was just talking about a recipe like this, and how good it is. So your post is definitely a sure sign <3

Ok, I laughed as soon as I read the R Kelly reference. I’ve never been a huge grapefruit fan but maybe the coconut sugar on top will change my mind. Sugar always helps 😉
