This cashew butter. Also known as, my jam. I’m all about it these days. It’s homemade cashew butter that’s reminiscent of cookie butter…you guys.
Let’s back up for a second – how are you all doing on this fine Friday? I can’t lie, this week has been a little crazy. It started with a chemistry test on Monday, and was followed by missed alarms, lab reports, snooze buttons galore, massive to-do lists and other odd happenings of life. Being an adult student while working full-time is no joke. Adult nap times need to be a thing.
But enough of that, let’s move onto the important stuff. Like your new favorite nut butter 🙂
So about this cookie butter situation – a couple things. First off, I hated nuts and nut butters as a child. Peanut butter? My worst nightmare (I know, I was crazy). I could roll with Reese’s cups or peanut butter cookies because they were super sugary and the peanut butter flavor wasn’t as strong. Seriously…what was wrong with me? When I was 21 I stopped eating meat, and decided to give nut butter another try as a protein source. Thankfully, my taste buds had come to their senses and I have been a nut butter loving machine ever since. It started with peanut butter, then almond butter, sunflower seed butter, and now my newest favorite…cashew butter. If you couldn’t tell, cashews and I are having a moment. It’s getting pretty serious.
In discovering my love for nut butters, I also found this magical creation called cookie butter. Trader Joe’s, you win yet again. Sweet deliciousness in a jar. I have actually only bought cookie butter one time several years ago, thought it was amazing then haven’t bought it since because it is far too dangerous, and does nothing for me in the nutrition department.
Then last week out of nowhere, a cookie butter craving hit. I eyed the bag of cashews on my counter, busted out the food processor and made some things happen. Very delicious things I might add. This stuff is amazing with sliced apples and bananas, and would also be delicious on toast or pancakes.
If you haven’t tried making your own nut butter at home, you totally should! It’s super easy, and a lot cheaper than buying store-bought. I mean, hi for $7 I could buy one jar of cashew butter. Or for $5 I can buy a bag of cashews and make two jars myself. I’m no mathematician, but that sounds like a much better deal.
If you have 20 minutes, cashews and a food processor along with a few other ingredients, you’ve got yourself the fixings for a good time.
- 2 Cups of Cashews - Can use pre-roasted, or roast them yourself. See below.
- 1 Teaspoon Cinnamon
- ¼ Teaspoon Ground Ginger
- ¼ Teaspoon Nutmeg
- ¼ Teaspoon Cloves
- 1 Tablespoon Coconut Oil, Melted
- 2 Tablespoons Coconut Sugar
- 1 Tablespoon Molasses
- If your cashews are not already roasted, bake them on a cookie sheet for 10 minutes at 350F. Let cool for a few minutes.
- Add cashews to food processor, and process until a thick paste forms. This will take several minutes. Feel free to stop the food processor and scrape down the sides.
- When the cashews start to form a ball, stop the food processor and add spices, coconut sugar and molasses. Continue to process for a few more minutes.
- Once your cashew butter starts to form, slowly add in coconut oil to help it reach a drippy consistency. Process for another 1-2 minutes.
- Transfer to a covered jar and store in the fridge, or in a cool dark place.

I’ve never tried Nut Butter! This looks so delicious that I might have to! What is it generally used for? In place of regular butter, or as a spread/smoothie ingredient? Totally new to this!
