These decadent bars have just a few ingredients, and make the perfect on-the-go snack or wholesome treat.
I’m feeling a lot of inner conflict about this “summer ending” business. August is always bittersweet. On one hand, it’s my birthday month (and also the birthday month of several of my close friends) which is always fun because there’s basically a month-long party. On the other hand…summer is ending. I can feel it happening already. The mornings are getting darker, the temperature is getting cooler and we are all being bombarded with back-to-school advertisements.
Womp womp. What a buzzkill. Except all the sales on school supplies for nerds like me – those are awesome.
I am in major denial about fall coming, so I’m going to stop talking about it. Until mid-September, I will consider that time the “F” word.
Note: don’t be fooled by my dramatics. By the time the “F” word gets here, I’ll be crazy excited to start wearing boots again and eat/drink/breathe all things pumpkin.Β Β I’m a very fickle person.
So about these bars. It doesn’t really make sense for them to be so delicious. I was inspired to make them after a work event last month for our interns. The venue for the meeting had this INCREDIBLE granola with toasted hazelnut chunks in it. Swoon. I knew I needed some more hazelnut in my life. What goes better with hazelnut than chocolate?Β
That was a rhetorical question, obviously the answer is nothing.Β
Inspired by the granola, I made a bar form to make it easier to eat on the go. With the “F” word coming, and many of us going back to the “S” word (school) on-the-go snacks are where it’s at. Especially when they are as good as these bars. They’re rich, decadent and delicious straight out of the fridge or freezer. I promise you’ll love them!

- 2½ Cup Rolled Oats (Gluten-Free if needed)
- 2 Cups Toasted Hazelnuts
- ½ Cup Honey
- ½ Cup Dark Chocolate Chips
- ½ Cup + 1 Teaspoon Coconut Oil
- Dash of Sea Salt
- Line an 8x8 pan with parchment paper and set aside. If your hazelnuts are not already toasted, bake them for 10 minutes at 350F. Let cool for a few minutes.
- Transfer 1½ cup of hazelnuts and sea salt to a food processor, and process until a runny hazelnut butter forms (this took me about 3-5 minutes).
- Roughly chop the other ½ cup hazelnuts into pieces and set aside.
- In a small saucepan warm the hazelnut butter, honey, and ½ cup coconut oil over medium-low heat until combined. Let cool for a few minutes.
- Transfer the hazelnut butter mixture to a large bowl with the oatmeal and mix until well sticky and combined. Gently stir in ¼ cup chocolate chips.
- Put the oatmeal mixture in the parchment lined pan, and spread into an even layer.
- Melt the remaining chocolate chips and teaspoon of coconut oil (I did this in the microwave) and drizzle over the bars.
- Transfer the pan to the fridge or freezer until set. It takes about an hour in the freezer, and 2 hours in the fridge. When set, slice into 8 bars.
- I wrapped them in plastic wrap and stored them in the fridge so they keep their shape.
