Today, I’m partnering with my friends at Blue Diamond Almond Breeze to share a recipe for one of my favorite breakfasts. These overnight oats taste like oatmeal raisin cookie dough, and are a healthy delicious breakfast that can be prepped in advance and eaten on the fly!
I have to say, my first few days of summer vacation have been glorious. They’ve been filled with lots of sun, time with family and a few Keeping Up with the Kardashians marathons. Don’t judge me. I needed to not use my brain for a few days, you know what I mean? Back to the topic at hand: oats.
I love overnight oats. If you haven’t hopped on the overnight oats train, please join us. I promise they’re delicious! Before trying them I was incredibly skeptical. Oatmeal that isn’t cooked? And is cold? And has chia in it? It sounded too weird to be good. But eventually my curiosity got the best of me, and it truly was love at first bite. I can easily say hands-down that I now prefer overnight oats to cooked oatmeal all year round. In fact, it was Angela’s overnight oats recipe that started my obsession with uncooked oats way back in the day.
There are an infinite ways to make overnight oats, and I promise this won’t be the last time you see them around here. I love this version because it’s simple and absolutely delicious. Bonus – it’s a breeze to throw together at night and take on the go in the morning. Perfect for all my busy peeps who still want to eat a good breakfast!
- ½ Cup Rolled Oats
- ¾ Cup Original Blue Diamond Almond Breeze
- 1 Tablespoon Vanilla Protein Powder (I used Perfect Fit)
- 1 Tablespoon Chia Seeds
- 1 Packet of Stevia or 1 Tablespoon Coconut Sugar
- ¼ Teaspoon Almond Extract
- ½ Teaspoon Vanilla Extract
- ¼ Teaspoon Cinnamon
- Combine all ingredients in a bowl and stir until well mixed.
- Cover and refrigerate for 4 hours or overnight.

I love overnight oats! My someday’s I have to get up at 430 to teach my group fitness class then I head straight to my job after that and overnight oats are the perfect breakfast for those busy days! I just throw the jar in my bag and heat it up when I get to work. I honestly look forward to waking up when I know I have overnight oats waiting for me…is that crazy? haha

This looks amazing!!! I think I’m going to have to try these tonight! But no chia seeds in this recipe?! How does it get so thick and fluffy looking? 🙂 Do oats absorb and grow the same way chia seeds do?
Hi there! I did use chia in these (I forgot to type that in the recipe – thanks for catching it!) but you can make overnight oats without chia. Usually reducing the almond milk and adding a little greek yogurt will do the trick 🙂
I’m not a huge oatmeal person in general, but this looks yummy! I’ll take banana protein pancakes any day of the week though 🙂

I have such a hard time liking oats…Every few months I try and I try, and the texture is just creepy to me! 😛 I wish I did like them though…at least I love oats in the form of granola!! My favorite summer breakfast is a Greek yogurt parfait, so at least I’m getting oats in that way, haha
