These energy bites are packed with cranberry and white chocolate. All of the flavor of Cranberry Bliss Bars in one delicious bite!
Happy Foodie Friday! For those of you in the US, I hope you had a wonderful Thanksgiving. How was it? Who did you spend it with? Most importantly – what did you eat? Tell me everything.
Around here, Thanksgiving was very low-key. I spent it at home with my parents and brother eating way too much food. Not too shabby.
Now that Thanksgiving has come and gone, it’s time to eat ALL of the cranberry treats. To kick things off, we are having these little bites of goodness.
Confession: I love the Cranberry Bliss Bars from Starbucks. I’m fully aware that I’m not Usher, and my confessions aren’t nearly as interesting or entertaining, but man Cranberry Bliss Bars are my ISH. Just had to put that out there. When I was in high school, weekly Cranberry Bliss Bars (while they were available) were a regular thing.
Since I’m not about that life anymore, I decided to channel my love for the treat into something I felt better about eating. Enter, these little bites.
Side note: do you know how hard it is to make cranberry balls look pretty? Spoiler alert, it’s pretty dang hard. Please don’t judge a ball by it’s cover – these taste amazing, I promise.
Dates, dried cranberries, cashews and white chocolate chips all come together to create the classic cranberry bliss flavor in one little bite. You’ll love these! They’re tart, sweet and make the perfect afternoon pick-me-up when you want a little treat but don’t want to go overboard.
- 2 Cups of Cashews (can also sub almonds)
- 1 Cup Dates, pitted and chopped
- 1 Cup Dried Cranberries
- ½ Teaspoon Vanilla Extract
- ¼ Cup White Chocolate Chips
- Pinch of Sea Salt
- Place cashews in a food processor and pulse until a coarse meal is formed.
- Add the pitted chopped dates, cranberries, vanilla and salt. Process until the fruit is blended with the cashews, and a large sticky ball forms.
- Add the white chocolate chips to the food processor and pulse until white chocolate is chopped and blended with the rest of the mixture.
- Use a cookie dough scoop or tablespoon to spoon out the mixture and roll into balls. Store in an airtight container in the fridge or freeze for longer storage.

Yum!! I made this exact thing the other day but instead of white i used dark chocolate. So good! And agreed, cranberry bliss bars are insanely delicious but i do need a healthier alternative.
