Happiest of Fridays to you! I consider you a friend, and like I do with all my friends, I need to be honest with you. As I type this, my mind is straight up blank. I am lacking these things called words to fill this post with. I have nothing to talk about. Ok, that’s a lie. I have a lot to talk to you about, but those topics aren’t the focus of today’s post. These glorious muffins are.Β
On the bright side, a perk of writing a recipe-based blog post is if you have nothing to say, it actually isnβt that big of a deal. Come on, admit it. You know youβve scrolled right past a post that could have taken the blogger hours to research, draft, put together and share just to get to the recipe or look at the pretty photos. Iβm not proud to admit it, but Iβve done it too. Weβre all human, we all have 24 hours in a day (unless your Beyonce…and she obviously reads every word of the blog) and sometimes we arenβt able to devote all 24 of those hours to reading every word on every blog we come across.
Just this one time, I won’t take offense if you scroll past the words just to look at the pictures. In fact, here’s another pretty muffin shot for you to look at:

So let’s cut to the chase, shall we? These muffins are made from oat flour, almond meal, fresh cranberries and a whole lot of orange zest to create a soft, tart and slightly sweet breakfast treat. Cranberry and orange are one of my favorite flavor combinations, and they pair together beautifully in these muffins.
THEN you’re going to drizzle it with a sweet orange glaze using our trusty friend, homemade coconut butter. I mean…you guys. Who needs a fancy post with real words when you have a sweet glazed muffin that’s completely gluten and dairy free?Β
And if you’re still reading this even after I warned above that it really wasn’t going to be about anything at all, you’re a good friend and I truly appreciate you. Treat yourself to a muffin on me π
- 1¼ Cup Oat Flour (make your own by grinding 1½ Cup oats in a food processor)
- 1 Cup Almond Meal
- ¼ Teaspoon Salt
- 1 Teaspoon Baking Soda
- 1 Egg
- ¼ Cup Coconut Sugar
- ⅓ Cup Maple Syrup
- ½ Cup Almond Milk + 1 Teaspoon Apple Cider Vinegar
- 1 Tablespoon Coconut Oil, Melted
- 1 Cup Cranberries, fresh or frozen
- Juice of 1 Orange (about ⅓ Cup)
- Zest of 1 Orange
- 3 Tablespoons Coconut Butter
- 2 Teaspoons Honey, Agave or Maple Syrup
- 2 Tablespoons Orange Juice
- 1 Teaspoon Water
- Preheat oven to 350F. Prepare a muffin pan with nonstick spray. Set aside.
- Combine the almond milk and apple cider vinegar in a small bowl to create a "buttermilk". Set aside.
- In a large bowl, whisk together the oat flour, almond meal, salt, baking soda and coconut sugar until well combined. Add the egg, maple syrup, orange juice and almond milk + apple cider vinegar mixture. Whisk until a smooth batter forms.
- Fold the orange zest and cranberries into the batter.
- Scoop the batter into the muffin pan until each tin is ¾ of the way full (I like using an ice cream scoop so all the muffins are the same size).
- Bake for 25 minutes or until an inserted toothpick comes out clean.
- When the muffins are finished baking, place the muffin pan on a wire rack to cool.
- Prepare the glaze by whisking all ingredients together in a small bowl until smooth. If the glaze is too thick, add additional water one teaspoon at a time until desired consistency is reached.
- When muffins have completely cooled, drizzle glaze over muffins.
- Store in a sealed container in the fridge for up to three days.

These look so good. I’m going to try to use regular flour and instead replace the almond milk with coconut milk and eggs with applesauce. My son has multiple food allergies, so we have to have nut-free and vegan baked goods.

Yum! I usually make a batch of muffins every Sunday to have for the week ahead. I think I have everything for these, but what exactly is almond meal? I have almond flour and I have almonds. Do ground up almonds make almond meal?
You could use almond flour here! Almond meal is like almond flour but isnt ground up as fine
