The best of both worlds, this dip has the zesty flavor of guacamole, with the creaminess of hummus. Bring it to your next party, it’s a crowd-pleaser!
I put my hand up on your chip. When I dip, you dip, we dip. <– This is why I am not in the music industry (aside from that whole lack of talent thing). Because my brain thinks of things like that. It doesn’t actually make sense. Why would I put my hand on your chip in the first place? That would be kind of weird if you actually wanted to eat the chip.
Have I ever told you guys how much my eating habits frighten my co-workers? Because they do. I’m pretty sure I’m the office weirdo, bringing my own random assortment of fresh, mostly green foods every single day into an office that is single-handedly keeping Jimmy John’s in business really helps me keep things weird. Okay, that’s probably not the only reason I’m the office weirdo but that’s beside the point. A few days ago I was snacking on half an avocado sprinkled with sunflower seeds and a drizzle of honey. A totally normal (and delicious) snack…at least in my humble opinion. When one of my coworkers saw me take a big spoonful of avocado, she was horrified.
“Are you eating an avocado?”
“…Yes…”
“That’s so weird.”
So…I won’t be telling her about this recipe 😉
If guacamole and hummus fell in love and had a baby, it would be this dip. Considering guacamole is one of my absolute favorite things on this earth, and I consider hummus a food group of its own, I’m very excited about this union.
Creamy greek-yogurt based avocado dips are delicious, but I thought it would be fun to mix things up a bit so my dairy-free friends could enjoy. Also, don’t even get me started on how easy it is. Throw some basic ingredients (that you probably have on hand) into the food processor, give it a whirl and you’re in business!
- 1 Ripe Avocado
- 1 Can of White Beans, drained and rinsed
- ¼ Cup of Cilantro, Chopped
- ¼ of an Onion, Chopped
- 2 Cloves of Garlic, Minced
- Juice of one Lemon
- Juice of one Lime
- 2 Tablespoons of Olive Oil
- Salt and Pepper to Taste
- Dash of Chili Powder
- Dash of Cumin
- In a food processor, pulse the beans and olive oil until a smooth, hummus-like consistency forms.
- Add in the avocado, cilantro, onion, garlic, lemon and lime juice, and spices to the food processor. Process until smooth.
- Transfer to a serving dish and garnish with additional chili powder and cilantro if desired.
- Store dip in a covered container in the fridge for up to 5 days.
