This Healthy Carrot Cake Smoothie Bowl is like having carrot cake for breakfast! It is absolutely delicious and even has two servings of veggies!
I mean, come on friends, who doesn’t love carrot cake? Ok fine, I’m sure there are some folks out there who don’t, but most of us are definitely down with carrot cake around these parts.
When it comes to smoothie making, it can be easy to get stuck in a rut. Using the same old banana, spinach, almond milk blend is delicious, but it can get old after awhile. That’s why I love coming up with new smoothie combinations – especially during the summer.
Today’s Healthy Carrot Cake Smoothie is my latest smoothie obsession. It has a creamy, dreamy texture thanks to frozen cauliflower and Natural Delights Medjool Dates. It’s perfectly spiced, lightly sweet, and tastes exactly like carrot cake. I topped mine with some sliced banana, coconut flakes, walnuts and more chopped Medjool Dates.

You'll Need...
- Smoothie Ingredients:
- ½ Cup Frozen Cauliflower
- ¼ Cup Frozen Banana Slices
- ¼ - ½ Cup Carrots, Peeled and Finely Chopped
- 2 Tablespoons Raw Cashews
- 1 Natural Delights Medjool Date
- ½ Cup Almond Milk (see how I make my own here!)
- 1 Teaspoon Pumpkin Pie Spice (or ½ Teaspoon Cinnamon, ¼ Teaspoon Ginger, ¼ Teaspoon Nutmeg)
- Optional: 1 Scoop Vanilla Protein Powder
- Toppings:
- Unsweetened Coconut
- Sliced Banana
- Walnuts
- Chopped Medjool Dates
Directions
- Blend all ingredients in a blender until smooth. Top and enjoy!
