Here in Seattle, it’s been super sunny with temps in the high 50’s and low 60’s. So I’m just going to pretend like spring is here and start eating ice cream. Sound good?
Let’s catch up shall we? I mentioned in a few recent posts that I was going to be moving, which is always a fun time…not. I’m actually moving back home with my folks to save money for that whole school thing because, you know, Master’s degrees ain’t cheap. I will say trying to fit an entire apartment’s worth of things into my teenage bedroom has been a real treat. All sarcasm aside, it has been pretty smooth as far as moves go. Turns out I am actually not as much of a hoarder as I originally thought!
Now, onto important business. Like ice cream. I could actually eat it for every meal if that were acceptable.
Sometimes you just want ice cream, but you actually need vegetables. It’s cool, I got you. With just a couple of super simple ingredients, you can have tasty mint chocolate chip ice cream that’s vegan, paleo-friendly and has no added sugar in no time – no ice cream maker required!
I recommend keeping a stash of frozen bananas in your freezer at all times so you can have ice cream on demand. Positive life choices, friends.
- 2 Bananas, Frozen and Sliced
- 1 Cup Frozen Spinach
- ½ Teaspoon Peppermint Extract
- A little unsweetened Almond Milk to get things moving (I used ~3 Tablespoons)
- ⅓ Cup Chocolate Chips (I used Enjoy Life Brand)
- Place the bananas, spinach and extract in a food processor and pulse until broken down. Then process until smooth, adding almond milk as needed to get a soft-serve consistency.
- Transfer mixture to a large bowl, and fold in chocolate chips.
- For soft-serve, eat it as-is. If you would like more of an ice cream consistency, place in the freezer for about an hour before serving.

You can never go wrong with banana softserve, and the mint chip kind sounds like such a good idea. Now I just need to get some mint extract . . .

I really need to make a mint ice cream of sorts and use spinach to make it green! I remember when I was younger and went nuts on the mint chocolate chip… I would only eat it if it were GREEN! ha ah!! But it was green from spinach, HECK NO!
