Peanut butter and chocolate. Does it get any better than that classic combination? Usually, no. But today, we are adding pumpkin in the mix and the chocolate covered peanut butter ball is getting taken to a whole new level.
I’m noticing a pattern here. I have been unknowingly going with the “Pumpkin Recipe Friday” series all month long. Sorry not sorry. Every Friday for weeks I’ve been bringing pumpkin recipes to you and I have one more coming, so don’t go getting all too cool for school on me just yet. And by too cool for school, I mean too cool for pumpkin.Β Don’t be that person.
Instead of continuing to blab about chocolate, peanut butter and pumpkin (I could go on all day), I would like to pick your brain a little bit.
So tell me, what do you do when you’re feeling uninspired?
If I’m being honest with you guys, I have been a big pouty pile of uninspired lately – especially when it comes to the blog. While I have no shortage of ideas, I am having a hard time feeling like you guys are picking up what I’m throwing down. I’m unsure ifΒ all of the content I’m working hard to put together is actually useful for people, or even being consumed. Right now I feel like it isn’t really hitting the mark, and I’m having a hard time figuring out how to better repackage my content to 1) make it better for you as the reader and 2) to better showcase my talents. Although I’m still figuring out what exactly those are π
I just dropped a whole lot on you – sorry about that. Let’s take a few steps back to the original question.
What do you do when you’re feeling uninspired, or when you feel like you’re working towards something that isn’t really going anywhere, or paying off like you hoped it would? I would really love to know!
Normally in these situations I would turn to one of my three go-to’s for busting out of a rut, get in a series of really intense workouts to clear my mind, or do what I’m doing now – which is write about how I’m feeling. Β Do any of those work for you? At this very moment none of them things are truly helping me feel more inspired to continue as I have been in this space. A switch-up is needed, but I just can’t put my finger on what needs to change and how to make that happen.
I really mean it when I say I want to know what inspires you to make positive changes in whatever you’re working on. Please don’t hesitate to leave a comment – even if you aren’t a blogger. I really want to hear from you!
And if that’s just too heavy for you then sit back, relax and enjoy the killer combo of chocolate, peanut butter and pumpkin.Β
- 1 Can of Chickpeas, drained and rinsed
- ½ Cup Pumpkin Puree
- 2 Tablespoons Coconut Oil, divided
- 1 Cup Natural Peanut Butter
- ⅓ Cup Honey (Can Sub Agave if vegan)
- 1.5 Cup Dark Chocolate Chips
- Prepare a baking sheet with wax paper, parchment or a silicone mat.
- In a food processor, blend the chickpeas until smooth.
- Add the pumpkin, 1 tablespoon coconut oil, peanut butter and honey. Blend until smooth and combined.
- Form balls from ~2 tablespoons of the peanut butter mixture at a time and place on the baking sheet. Place the baking sheet in the freezer for 20-30 minutes so the balls can firm up.
- Once the balls are firm, melt the chocolate chips with the remaining tablespoon of coconut oil. You can do this over a double boiler, or in the microwave (just be careful when using the microwave to ensure the chocolate doesn't burn).
- Remove the balls from the freezer and use a toothpick to dip each ball into the chocolate and coconut oil mixture. Swirl the toothpick around to the chocolate comes up the sides, but doesn't completely cover the buckeye. Once coated with chocolate, place the buckeye back onto the baking sheet.
- When all buckeyes are coated with chocolate, place in the fridge to firm up the chocolate. Serve immediately, or store in a covered container in the fridge.
This recipe is GENIUS! Ah I have all the ingredients & will definitely be making this asap!!

Or sometimes I need to just take a break get out of my normal routine for a bit and come back to it with a fresh head. Also this recipe looks and sounds delicious. I don’t think I’ve ever paired pumpkin with peanut butter before but I’m definitely intrigued π

Les i totally get the whole uninspired aspect of blogging. i think it happens with everyone, and it definitely has happened with me SO many times. there are so many great things about it, but you have to take the good with the bad. honestly i will just often take a break and come back at it a couple weeks later. I think your stuff is amazing and i am alwaysss jels of your pictures. you have a great talent and don’t forget that π
