Every time I go to a Mexican restaurant, I play this little game called “I’ll pretend like I’ll consider ordering something that isn’t fajitas, only to end up ordering fajitas.” It’s pretty fun.
All jokes aside, I love fajitas and do order them anytime I’m at a Mexican restaurant. I love how satisfying they are, how simple the ingredients are, and there’s just something really fun about assembling them myself. Recently, I realized I have never actually tried making fajitas at home and needed to change that ASAP.
Now for a little real-talk alongside our fajitas. Over the last few months, I have been thinking a lot about food blogging and recipe sharing, and whether me doing it truly adds any value. While I feel confident in my cooking abilities and my ability to take a pretty photo of my plate, often times blogging about food feels like shouting in a loud crowded room. I love to cook, but my eats are usually super simple and are hardly earth-shattering when it comes to creativity. I enjoy photographing food, but I like to keep things simple because I don’t have hours upon hours to spend styling sophisticated photos. When there are thousands (millions?) of bloggers out there with more creative recipes, prettier and elaborate photos than mine and more followers than I have, what’s the point?
Last week, I answered my own question while chatting with Christina and Nina during an interview for their Actually Adultish podcast (which you should totally listen to if you haven’t already!). The platform that I have created is all about making healthy eating simple and attainable. I want to inspire people and teach them they don’t need to spend a ton of money on crazy ingredients or spend hours in the kitchen everyday cooking elaborate meals to be healthy. That’s my “why” (or at least a big part of it). That’s what makes me feel like even though I may be shouting in an already loud or crowded room, someone is out there listening and benefitting from what I have to share.
So with that said, I invite you to enjoy these fajitas. Yes, there are a million fajita recipes on the internet, but this is how I like to make them. I wrapped mine in Siete Foods Almond Flour Tortillas, which I’m currently obsessed with, but you can wrap them in whatever you would like. These fajitas are ridiculously easy to make (exactly how I like it), made with wholesome ingredients you can feel good about eating, and still pair nicely with a margarita on the side if you feel so inclined. Because hey, balance.

These healthy sheet pan chicken fajitas are made with simple, clean ingredients and come together on one pan. They are easy to make, and are perfect for feeding a crowd!
You'll Need...
- For Fajitas:
- 3 Bell Peppers, seeded and sliced into strips (I used one red, one yellow and one green)
- 1 lb. Boneless Skinless Chicken Breast, sliced into strips
- 1 Sweet Onion, sliced into strips
- 4 Tablespoons Avocado Oil, Coconut Oil, or Algae Oil
- 2 Teaspoons Cumin
- 2 Teaspoons Chili Powder
- 1 Teaspoon Granulated Garlic
- 1 Teaspoon Granulated Onion
- Salt and Pepper to taste (I started with ½ Teaspoon of each)
- For Serving:
- Tortillas (I used Siete Foods Almond Flour Tortillas)
- Sliced Avocado
- Lime
- Cilantro
Directions
- Preheat oven to 400F.
- Place sliced chicken, onion and bell peppers in a large bowl.
- Drizzle the oil and spices all over the chicken, onion and bell peppers. Toss until all ingredients are well-coated.
- Transfer to a baking sheet and spread into an even layer.
- Bake for 25-30 minutes, or until chicken is cooked through and vegetables are soft.
- Remove from oven and allow to cool for a few minutes before assembling fajitas and garnishing avocado, cilantro and lime juice.

YES. I’ve been feeling the same way. Like people will ask me to put up a recipe for something so basic like…roasted cauliflower..and I’m like..why would I do that? Like I feel this pressure only to post something if it’s SO different and SO creative. But at the end of the day… people want REALISTIC. I’m glad you posted these fajitas because I will realistically make these and they look amazing. IDC how many fajita recipes are on the Internet — I like these. Kinda like…would you throw your grandma’s cookie recipe out just because there are 500 others on the web? NOPE! Love you!
