These fish tacos feature my latest seafood obsession – Mahi Mahi. They’re super easy to make, and are topped with delicious pineapple salsa for a little sweetness!

Speaking of parties, I can say without a doubt the best Cinco de Mayo I ever had was my senior year of high school hanging out with my best friend. We spent hours in her living room drinking virgin margaritas and trying to learn the dances to Beyonce videos. Yes, this is what a normal Wednesday night looks like for me, but it was obviously more fun with her. We’re pretty cool like that.
Back to these tacos. They are perfect for Cinco de Mayo! Or any day you want something delicious.
I am obsessed with Mahi Mahi right now. Can we talk about that for a minute? I love love love it. I actually had it for the first time a few weeks ago, and have been loving it ever since. It’s a hearty fish that’s super easy to prepare and isn’t overly fishy. I can get with that, because I’m super picky about seafood and am not into fishy fish. If you feel me on that, get with the Mahi Mahi. You’ll dig it.
And the pineapple salsa MAKES IT. I’ve been a pineapple monster lately, plowing through a pineapple a week by myself for the past several weeks. I’m all kinds of not sorry about it, and will continue to do so all spring/summer long. I highly recommend you go grab a pineapple, some Mahi and a margarita and get with this.
- 1 lb Mahi Mahi
- 2 Tablespoons Olive Oil
- 2 Tablespoons Pineapple Juice
- Juice of 1 Lime
- 1 Teaspoon Chili Powder
- 1 Teaspoon Paprika
- ½ Teaspoon Garlic Powder
- Salt and Pepper
- Pineapple Salsa:
- 1½ Cups Diced Pineapple
- ½ Cup Diced Red Bell Pepper
- ¼ Cup Diced Onion
- ¼ Cup Chopped Cilantro
- 1-2 Tablespoons Chopped Jalapeño, depending on heat preference
- Juice ½ Lime
- Salt and Pepper
- Taco Add-Ons:
- Corn Tortillas (warm before serving) or Lettuce Wraps
- Avocado
- Chopped Cilantro
- Shredded Cabbage/Carrots
- In a small bowl, whisk together the Olive Oil, Pineapple Juice, Lime Juice and seasonings. Transfer to a large container or zip log bag with the Mahi Mahi, and allow to marinate for at least 30 minutes.
- To prepare the salsa, combine the pineapple, diced bell pepper, onion, cilantro, jalapeno, salt & pepper and lime juice in a bowl. Toss until evenly mixed.
- To cook the fish, warm a large skillet over medium-high heat and add non-stick spray. Place the fish in the pan, and cook for 3-4 minutes per side. This would also turn out really well on the grill.
- Place the fish on warmed tortillas or lettuce wraps and top with salsa and toppings of choice. Garnish with additional cilantro and lime juice. Serve immediately.

girl i’m with ya on that pineapple train. it is my FAVORITE fruit. the only reason i dont buy it every week is because sometimes its just too heavy to lug home on the bus with all the other groceries haha. never used mahi mahi before but gonna check it out!

YUM!! I have a mahi recipe with pineapple MANGO salsa…but I haven’t tried it in taco form yet. I MUST do that soon. I have literally been eating tacos everyday this week! HA! And I’m totally ok with it too… and ps. the Justin pic still get me every year too! lol
