Have you priced a jar of coconut butter at the grocery store lately? It’s insanely expensive! I love any and all things coconut, including deliciously creamy coconut butter, but I don’t love it enough to shell out double digit prices for a jar of the stuff. I’m ballin on a budget here, and I know many of you are too.
Thankfully, making coconut butter at home is incredibly easy and cost-effective. All you need is unsweetened shredded coconut and a food processor or high-speed blender.
To make smooth, drippy coconut butter it is important that you use shredded coconut, not coconut flakes. If you use coconut flakes, you’ll get gritty coconut mush – a far cry from the creamy coconut butter we are looking for. Just process the coconut for a few minutes, and voila! You have delicious coconut butter that is much cheaper than any variety you would get in the store. It took me about three minutes of blending in my Nutribullet to get coconut butter.
I love using coconut butter in baked goods, and as a base for frostings and glazes. Now go grab some coconut (bonus if you get it from a bulk bin) and let’s make some coconut butter!
- 8 oz. Unsweetened Shredded Coconut (NOT flaked coconut)
- In a food processor or high-speed blender, process coconut shreds until drippy and smooth. You may need to stop the food processor a few times to scrape the sides and keep things moving.
- Transfer to a mason jar and store in the fridge. To soften before using, place the jar in warm water until desired consistency is reach.
