I love a good date-based energy bite as much as the next girl, but sometimes you want something a little less sugary, am I right? For matcha week, I knew an energy bite made with matcha needed to happen.
These bites are actually the perfect way to power through the afternoon slump. They’re packed with healthy fats thanks to the coconut butter, and you’re getting a gentle caffeine and antioxidant boost from the matcha. Bonus: we’re using matcha collagen so you’re getting some protein in there too.
Personally, when I’m feeling a little sluggish in the afternoon, I like reaching for snacks that have more protein and healthy fats because I don’t experience the same energy crash that comes with carb-heavy snacks.
This recipe is perfect for meal prep, as these energy bites keep well in the fridge or freezer ready for you to grab and snack on all week long.

Ingredients
½ Cup Melted Coconut Butter
1/2 Tablespoon Coconut Flour
2 Tablespoons Maple Syrup
1 Tablespoon Coconut Oil, Melted
1 Scoop Vital Proteins Matcha
Instructions
- Mix all ingredients together in a medium bowl until well-combined. Place the mixture in the fridge for 10 minutes to stiffen up.
- Use a tablespoon for mini-scoop to form into balls. Store in an airtight container in the fridge or freezer.
