These no-bake pumpkin spice donut holes are an easy, healthy way to get your pumpkin spice fix on the go!
Hi hi hi friends. How are you doing? I’m sure your fabulous self is just killing it at life, right? I knew it.
Are we still into this fall thing? Or are we over it? Oh wait, I was over it before it started. In all seriousness, I feel like the hype for fall is really just hype for the last week of summer/first week of fall when we can feel socially acceptable consuming pumpkin spice and wearing “fall fashion” without freezing our a$$es off. Am I right? Because 90% of the fall outfits I see on Pinterest would leave me a soggy, freezing mess thanks to all this liquid sunshine that has already started flowing here in the Pacific Northwest.
I’m not bitter summer is over or anything.
Wait, I lied. I’m still very bitter.
Thankfully, despite my intense hatred for all things cold weather, my love for pumpkin spice still lives on. I also may or may not have put a good dent in the giant case of pumpkin puree I ordered on Amazon. I pretty much have an open can of pumpkin on hand at all times this time of year. Pumpkin is just a very necessary food group between the months of September and December. Don’t ask questions – just eat all of the pumpkin.
Because it has been awhile since I’ve given you a good dose of awkwardness, I also made a video for the recipe. I could be a normal blogger and just do a Tasty-style-hands-making-the-food video, but that’s not nearly awkward enough so I had to do a little talking. You know, it wouldn’t be The Balanced Berry if I don’t embarrass myself for the world to see.
In the spirit of the season, I’m bringing you perhaps the easiest pumpkin spice treat ever. I was originally just going to call these “Pumpkin Spice Energy Bites” but after making them I was amazed that they actually turned out more cake-like and were reminiscent of a donut hole. So yes, that would be a donut hole that is totally vegan, gluten-free, doesn’t require any baking and comes together in a pinch.
Again, don’t ask questions. Just eat the donut holes (bites? balls?).
- 1 Cup of Chopped, Pitted Dates*
- 2 Tablespoons Pumpkin Puree
- 1 Teaspoon Pumpkin Pie Spice
- ½ Teaspoon Vanilla
- 2 Scoops Vanilla Protein (I used Ka'Chava)
- ½ Cup Pumpkin Seeds
- ½ Cup Chopped, Toasted Pecans
- Cinnamon for Dusting (Optional)
- Place the chopped dates in a food processor and pulse until they break down.
- Add the remaining ingredients to the food processor and blend until all ingredients are combined and form a ball.
- Roll ~2 Tablespoons at a time into balls, and place them on a cookie sheet.
- Refrigerate for 20-30 minutes until firm.
- Sprinkle with additional cinnamon as desired.
- Store donut holes in a sealed container in the fridge for up to a few days.

Pumpkin spice goodies make everything better. Even if you are cold, drenched and soggy! I love fall – and unfortunately I don’t get it here in Southern California! These donut holes looks so so so good!
