Sometimes, you just need some chocolate cake in your life.
And by sometimes, I mean most of the time.
This my friends, is the type of chocolate cake you actually can eat most of the time. Aside from being made with just a few simple (and not scary) ingredients, it’s the perfect single serving size and you can go from not having cake to eating cake in under 5 minutes. Ideal.
This was actually a throw-together-I-need-cake-NOW recipe, not an intended blog recipe (hence the gorgeous photography…) But it was too good to keep to myself 🙂
Chocolate Peanut Butter Mug Cake

A quick, delicious mug cake for whenever you need a little treat.

Ingredients
- 2 Tablespoons Coconut Flour
- 2 Tablespoons Unsweetened Cocoa Powder
- 1 Tablespoon Sweetener of Choice (Honey, Stevia, Maple Syrup, etc.)
- 1 Egg
- 1/4 Teaspoon Baking Powder
- 1/4 Cup Almond Milk
- 1 Tablespoon Peanut Butter Chips
Instructions
- Prepare a mug or small bowl by spraying with non-stick spray. Set aside.
- In a separate small bowl, combine coconut flour, cocoa powder and baking powder.
- Whisk in egg, sweetener and almond milk until a thick batter forms.
- Gently fold peanut butter chips into batter.
- Pour batter into prepared mug and microwave for 90 seconds. If cake is not cooked through, repeat in 30 second increments until finished.
