There are endless reasons to love summer. Warm weather and longer days are towards the top of that list for me but if we’re being honest, the real reason I love summer is for the fresh fruit.
Specifically, for my deep love of watermelon. Easily my favorite summer fruit – especially because you can really only get it during the summer. Plus, as someone who is ballin’ on a budget, I appreciate how affordable watermelon is when purchased whole. In fact, watermelon is the best value in the produce section among fruit at only 17 cents per serving. (*2017 Watermelon Purchase Survey, conducted by MyPoints.com. Inc, August 2007)
Although you can’t exactly toss a watermelon in your bag to snack on later like you can with an apple or banana you can definitely enjoy watermelon on-the-go with the right prep.
During my summer weekly meal prep, I always make sure to chop up some fresh fruit (especially watermelon) so it’s ready to grab throughout the week. Lately, my favorite way to enjoy watermelon on-the-go has been in my post-workout smoothies.
Watermelon is an amazing fruit to refuel with after a tough workout. Not only is watermelon super-hydrating (it is 90-percent water afterall), it also contains an amino acid called L-Citrulline which may help reduce muscle soreness and boost recovery (source).
When you blend watermelon, frozen cherries (also great for post-workout recovery), and greek yogurt (for protein) you get an amazing post-workout treat that’s perfect for taking on-the-go during busy summer days.
