Happy Tuesday! I hope your week is getting off to a fabulous start. It’s about to get even better, because I have a healthy smoothie recipe for you that tastes like red velvet…YUP.
Smoothies are my jam. I’ve loved them since I was a kid, although I’m sure back then I was drinking glorified milkshakes 😉 Nowadays I love having smoothies post-workout, or as a quick breakfast option while I’m running out the door.
Red velvet is just one of those things everyone loves. It’s kind of like pizza…even when it isn’t that great (i.e.: from a box, store-bought, etc.) it’s still pretty dang good. Although we all love it, red velvet cake every day shouldn’t really be a thing. This smoothie however, could be an everyday thing.
This bad boy is much healthier than your average red velvet cake, and way easier to make. It’s tasty, super creamy and nutritious thanks to an awesome set of ingredients. The frozen cherries aid in the creamy texture while providing a great source of Vitamins A and C, along with rich antioxidants that can help reduce inflammation (tip: cherries are great post-workout to reduce muscle soreness). The beet (yes, beet) is a good source of folate and potassium – so drink up!
- 1 Cup Unsweetened Almond Milk
- 1 Frozen Banana, Sliced
- ½ Cup Frozen Cherries
- 1 Small Steamed Beet, Chopped (I used a pre-cooked beet from Trader Joe's)
- 1 Tablespoon Cashew Butter
- 1 Tablespoon Cocoa Powder
- 2 Teaspoons Stevia (or sweetener to taste)
- Optional: 1 Serving of Chocolate Protein Powder (may need to decrease Stevia)
- Add all ingredients to a high-powered blender and blend until smooth. You may need a little extra almond milk to get things moving.
- Serve immediately.
