Juicy chicken stuffed with roasted red pepper, basil and smoked mozzarella. Perfect weeknight dinner!
HAPPY FRIDAY! Sorry for yelling, I’m just so glad the weekend is here. I don’t have any grand plans, just studying + prepping for finals, and hopefully getting caught up on some much needed sleep. Getting real wild and crazy over here, I know. It’s really hard being this cool you guys.
Just to give you an idea of how cool I really am, two Fridays ago I went to bed at 9:00 p.m.
On a Friday.
Like for real. I went to bed way before my parents. Those party animals, sheesh.
I will say, living at home has had its fair share of advantages when it comes to cooking. First of all, my parents’ kitchen is way nicer than any kitchen I’ve had on my own. I mean, the appliances all work and are in good condition. #winning. Plus their dishes are way nicer, they have tons of kitchen gadgets, and they have an instant hot so I can have my tea and warm lemon water RIGHT NOW instead of waiting two minutes to heat water myself. Ain’t nobody got time for that.
But by far, the best part has been spending time with my family in the kitchen again, bouncing ideas off of them and having a team of taste-testers always ready to lend their support 😉 The fam played a big role in today’s recipe.
Let’s take a step back and be honest, chicken can get boring real quick so I’m always looking for more ways to jazz it up. Although, I can’t take too much credit for this recipe. My mom threw together this dish a few weeks ago and we’ve all been obsessed ever since!
It’s super simple really. Chicken stuffed with creamy smoked mozzarella, roasted red pepper and basil baked and served with your favorite veggies on the side. An easy, delicious dinner you can feel good about!
- 2 Boneless, Skinless Chicken Breasts
- 2 oz Smoked Mozzarella Cheese, Sliced
- 4 Basil Leaves
- 2 Roasted Red Peppers (I used jarred peppers)
- 1 Tablespoon Olive Oil
- Salt and Pepper to taste
- Preheat oven to 375F.
- In a baking dish, lay the chicken breasts flat. If they are not an even thickness, feel free to pound them a little thinner until they are even.
- On each piece of chicken, lay 1 oz of the cheese, 1 roasted red pepper and 2 large basil leaves.
- Roll the chicken breasts so the filling is enclosed, and secure with toothpicks if needed.
- Drizzle the olive oil over the chicken, and season with salt and pepper.
- Bake at 375F for 35-40 minutes, or until cooked through.

I am always blown away by how amazing my parent’s kitchen is whenever I visit. They literally have every gadget I could ever need or want to help make a recipe. And they actually have counter space! I told my Mom the other day that I want to have a kitchen like hers when I finally “grow up” and get a real house 🙂
