That’s quite the mouthful to say, isn’t it? In the blogosphere there are countless chickpea cookie dough ball/bar/dip recipes – and most of them are incredibly delicious. As a cookie dough specialist, I am fully equipped to say that. However, there isn’t a whole lot of variety. Don’t get me wrong, I love a good blob of chocolate chip cookie dough as much as the next girl, but sometimes you just want to spice things up a bit. Insert: these snickerdoodle bites.
Not only are they super delicious and sure to satisfy your sweet tooth, but these little guys have some serious staying power. Packed with fiber and protein, they’d make an excellent snack pre or post-workout. Or just whenever you want a little treat.
Snickerdoodle Protein Balls

Ingredients
- 1/2 can of chickpeas rinsed and drained
- 1/2 cup rolled oats
- 2/3 cup raw cashews soaked for at least an hour, then drained
- 1 scoop vanilla protein powder (optional - I used vanilla Shakeology)
- 2-3 tbs coconut flour
- 1/4 cup maple syrup
- 1 tbs coconut oil, melted
- 3 tbs granulated sweetener (Coconut Sugar, Stevia, etc.)
- 1 1/2 tsp cinnamon – divided
Instructions
- Place drained chickpeas, cashews, oats, coconut oil and protein powder (if using) into a food processor and blend until combined
- Once combined, add in coconut flour, maple syrup and 1/2 tsp of cinnamon. Process until the mixture reaches a cookie dough consistency
- In a separate container, mix sweetener and remaining cinnamon
- Scooping out one tablespoon at a time, roll the dough into balls then roll in sweetener/cinnamon mixture
- When all bites have been rolled in cinnamon, place in an airtight container and refrigerate for approx. 30 minutes or until set.
