These coconut flour pancakes are the perfect filling, wholesome breakfast. They’re gluten-free, grain-free and take just a few minutes to make!
First of all, I know I’m going a little crazy with the breakfast foods over here. We had quinoa bowls, veggie-packed steel cut oats and now pancakes. I have to throw a sorry not sorry out here though, because we all know breakfast foods are the best foods. Don’t act like you don’t love it.
Friends, I am bringing back a little piece of Balanced Berry history for you today. I originally posted this recipe back in August 2014 when I was still getting my arms around this whole “blogging” thing. Who am I kidding? I’m still trying to get my arms around this whole “blogging” thing. Nonetheless, this is an awesome recipe that got lost among all my other posts. Perhaps this recipe got lost from that stunning (sarcasm) photo I took on my iPad. Uhh yeah, I didn’t even have the decency to use my phone. I kind of cringe just looking at that picture. Or maybe it got lost because this was during the time where I had started the blog, but didn’t tell aย single soul about it. I was just creeping around on the internet. Again, who am I kidding? I still don’t ever really talk about my blog, and I do still creep around on the internet – I just take slightly better photos now. ๐
All of that to say, this recipe deserved to be resurrected because these pancakes are damn good and are incredibly easy to make. They come out tender, fluffy and are incredibly filling thanks to high fiber content of the coconut flour. I even had a few taste testers including a very honest three year old try them, and they received a thumbs upย all around!
So if you’re looking for a tasty gluten-free alternative to your weekend pancakes, or just really like pancakes (which is everyone, right?) give these a shot.ย
- 1 Egg plus 1 Egg White
- ¼ Cup Coconut Flour
- 1 Tablespoon Honey
- ⅓ Cup Almond Milk
- ¼ Teaspoon Baking Soda
- 2 Tablespoons Greek Yogurt
- Splash of Vanilla
- Pinch of Salt
- ¼ Teaspoon Cinnamon
- ¼ cup of blueberries
- Spray a medium skillet with non-stick spray and warm over medium-low heat.
- Mix the coconut flour, salt, cinnamon and baking soda together in a small bowl.
- In a separate bowl, whisk together the almond milk, eggs, vanilla, yogurt, and honey.
- Add wet mixture to dry ingredients and whisk until all ingredients are combined and a batter forms.
- Fold in blueberries.
- Scoop about ⅓ cup of batter into the pan at a time, and cook over low-medium heat for a few minutes until bubbles start to form. Carefully flip and cook on the other side. Repeat until all batter is prepared.
- Serve immediately.

Coconut flour is so fun to work with! It definitely takes some experimenting, but can be really tasty in the right recipe!

Made these pancakes and they are so delicious you would NEVER know they are healthy. The batter is super fluffy. It is a little challenging to get the pancakes to stay together on the griddle/flip – but I don’t care how they look, just how they taste…and how they taste is YUM!!
