This layered tropical smoothie is like a vacation in a glass. How good does that sound right about now?
I feel a vacation calling my name. Like, forreal. Fun fact: I had never taken an actual vacation until last year. Uhhhh you guys where have I been?! Well, nowhere apparently. I quickly found out vacations are the best thing since sliced bread.
Knowing when to take a little time off to recharge is an important part of living a healthy life. I currently don’t have any trips planned, so for now I’ll sip on this smoothie and pretend I’m in a tropical place.
Last summer my mom and I took a girl’s trip to Punta Cana in the Dominican Republic. It was a full week of bonding, sun, sand, beaches and all-inclusive resort living. It was actually the best week ever.
A few highlights include:
Daily activities on the beach
A spa cruise with massages, yoga and pedicures
Foam party at the resort’s pool (oh yes we did)
Napping on the beach, opening up my eyes and seeing this palm tree situation:
Tough life, I know.
We also had our fair share of (unlimited) fun tropical drinks. Our favorite was the Miami Vice, a frosty cocktail that’s half pina colada and half strawberry daiquiri. Oh yes.
Now that the weather is turning around, I’ve been craving smoothies like none other. I usually roll with some form of my green smoothie bowl but recently, I was craving something a little fruitier. A little more vacation like.
I was craving a Miami Vice.
Unfortunately those aren’t quite as acceptable to drink at 10:00 a.m. back home as they are on the beach in DR. They also aren’t exactly “healthy” in any way, shape, or form. So I knew I needed a smoothie substitute.
I used Almond Breeze Unsweetened Almond Coconut Milk, and the smoothie turned out perfect. It has just enough coconut flavor without being too overpowering. Whip this bad boy up if you’re craving a tropical getaway as much as I am. It’ll hit the spot!
- Pina Colada Layer:
- 1 Cup Frozen Pineapple
- ½ Cup Unsweetened Almond Breeze Almondmilk Coconutmilk
- ½ Cup Pineapple Juice
- 3 Tablespoons Unsweetened, Shredded Coconut
- Optional: 1 Serving of Vanilla Protein
- Strawberry Daquiri Layer:
- 1 Cup Frozen Strawberries
- ½ Cup Unsweetened Almond Breeze Almond Coconut Milk
- ½ Cup Pineapple Juice
- 1 Teaspoon Honey
- Blend the ingredients for the pina colada and strawberry daiquiri smoothies separately.
- Taste and adjust as needed (a touch more honey for sweetness, more milk or juice if its too thick). Layer in two glasses and serve immediately.

Ahh I love this idea. Smoothies are totally my idea of a vacation in a glass. Over Christmas I visited my family in London which was so nice. I love Europe and traveling in general. In high school my Spanish club took a trip to Barcelona and it was incredible. We got to experience so much of the culture because we stayed in home stays for the week.
