Let’s be honest – when you’re first starting to clean up your diet, it can be a little confusing. One minute the media tells you a certain food is healthy, then the next minute they tell you it’s going to kill you. That was aggressive, but you know what I mean.
What’s a new clean eater to do? And if you aren’t supposed to eat food you can’t pronounce, wtf is up with quinoa?
The fabulous Nikky from Health Nut Nutrition is making healthy eatingĀ easier for you with her e-book, “An Everyday Guide to 5 Superfoods.” It’s a straight-forward guide on how to incorporateĀ five popular superfoods into your diet. She walks you through how to buy, store and prepare some of my favorite grocery staples such as beets, kale and quinoa. She even included full-length recipe videos for all of the recipes in the book.
Basically, she’s making healthy eating super easy for you.
Nikky was nice enough to send me a copy of her e-book and is letting me share a recipe with you all! Being the kale fanatic that I am (no for real, I have a ‘kale’ sweatshirt a la Beyonce – although I’m not sure what I love more, kale or Beyonce…) I was dying to try the Vegan Kale Caesar Salad. ItĀ has quickly become one of my favorite salad recipes, and I am sure you will love it as much as I did.
Let me tell you – it doesn’t disappoint. The salad has a base of kale and romaine, and is tossed with a creamy, garlicky dressing that will leave you saying “dairy who?” Then it’s all topped with crunchy chickpea croutons and vegan cashew parmesan. Are you hungry yet?

- Salad Base:
- ½ Head Romaine Lettuce, washed and chopped
- ½ Head Lacinato Kale, washed, de-stemmed and chopped (I used curly kale)
- Dressing:
- ½ Cup Soaked Cashews
- 6 Tablespoons Filtered Water
- 3 Tablespoons Extra Virgin Olive Oil
- ½ Lemon, juiced
- 1 Teaspoon Dijon Mustard
- 2 Teaspoons Capers, minced
- 1 Garlic Clove, minced
- 1 Teaspoon Coconut Aminos
- Salt and Pepper to taste
- Chickpea Croutons
- Raw Vegan Parmesan Cheese
- In a blender combine soaked cashews and filtered water and blend until you reach a smooth consistency.
- Next, in a medium bowl add in your capers, garlic, lemon juice, coconut aminos, mustard and pepper.
- Using a whisk slowly add in your olive oil to emulsify the lemon juice with the oil for a creamy texture.
- Slowly, add in 1ā2 of the cashew cream (save the other half to add into a pasta sauce or soup).
- Sprinkle about 1ā4 cup of your parmesan cheese in which will give your dressing a salty taste and cheesy texture.
- In a large salad bowl add in your chopped greens, pour your dressing over and thoroughly coat all the leaves by tossing.
- Top with chickpea croutons and sprinkle some extra vegan Parmesan cheese.
- Serve immediately or refrigerate for a couple hours.

This salad sounds incredible.. I love the idea of chickpea croutons.. I can’t get enough of roasted chickpeas they’re so delicious.
Roasted chickpeas are THE BEST. I ate so many of them they barely made it on the salad š
They actually did release a study that kale can kill you. But, you would have to eat around 15 cups of cruciferous plants a day before you’d kale over. (I’m sorry, I really couldn’t help myself)
