Celebrate the beginning of summer with these pops! They feature mango instead of orange for a fun tropical twist, and are dairy and refined-sugar free.
Memorial Day Weekend is up on us. You know what that means – it’s the unofficial start of summer! I love summer, and am 100% sure I was born into the wrong climate. Don’t get me wrong, I love Seattle. But good lawd the 9-10 months of pure grey every year get old real quick. Gimme all the summer.
And nothing says summer like popsicles.
I’ve been on a hugeeee mango kick. I’ve been having it with everythang. Snacking on dried mango with nuts, putting it in my green smoothies and enjoying mango salsa. Creating a summer treat featuring mango was clearly the next step.
This creamy mango goodness can be made in popsicle molds or an ice cube tray (I used both!). Creamsicle Remix ft. Mango. Let’s do this.
- 1 Can of Coconut Milk
- 1.5 Cups Chopped Frozen Mango
- 2-3 Tablespoons Honey, Agave or Maple Syrup (depending on sweetness of mango and your preferences)
- ¼ Teaspoon Vanilla Extract
- Dash of Sea Salt
- Add all ingredients to a high-speed blender and combine until smooth.
- Pour into popsicle molds or an ice cub tray and freeze until set (~5-6 hours).

AH These look so delish. I bet they would be so good as a smoothie if they were in ice cube trays! Throw in a little extra coconut milk and spinach and you’ve got yourself a quick green smoothie! I have some popsicle molds collecting dust but I know what I’ll be using them for this summer!
