These watermelon cherry popsicles could not be easier to make! They only require four ingredients and contain no added sugar.
Oy – it has been a tough week, hasn’t it? Far too much tragedy, hate and negativity. I can’t lie, I feel really lame talking about making popsicles when there are so many people hurting over senseless acts.
So I’m going to try and make this a little less lame, and start things off with a question for you. What is your favorite thing about summer? It would be easy to rattle off things like warm weather, fresh produce and cute summer clothes but I want you to dig a little bit deeper. Ok fine, fresh produce and cute clothes are still up there for me, but if we dig a little deeper we also love the sense of community that comes with summer. Think about it, as soon as the weather starts warming up you probably round up some of your friends and immediately look for the nearest place to do happy hour outside. We all do it.
Or maybe your family likes to gather at your house for all of your summer cookouts. Or maybe you and your loved ones take an annual trip or vacation every summer to make new memories together. With so much hurt happening in the world, right now is the perfect time to continue to gather, and to appreciate the people we love that much more. So yes, while I feel a little lame talking about popsicles when there is so much more happening in the world, if you enjoy some homemade popsicles, or a burger, or a salad, or an amazing dessert with the people you love this summer then that makes it all feel a little less lame.
This recipe seriously could not be easier, or more delicious. It also screams “summer” because it has some of my favorite flavors of the season. On Instagram the other day, I posted a picture of the cherries and watermelon I used for this recipe and asked you all what your favorite summer fruit was. I thought I was dead-set on cherries and watermelon when I posted the picture, but you all brought your A-game and listed off so many amazing fruits like peaches, mangoes, pineapple and berries. Seriously, why are all of those things SO GOOD.
This may be one of my favorite recipes I’ve shared and it is by far the easiest recipe to make. You just take four simple ingredients, give them a whirl in the blender and freeze them in popsicle molds. It seriously does not get easier than that. Ooooh I’m having a major lightbulb moment while writing this – you could also freeze the mixture in an ice cube tray to make watermelon cherry cubes. Then when you want a quick smoothie you can blend up the cubes with some coconut water and have a refreshing, electrolyte-filled sip on the go. I literally made that up at this very moment. You’re welcome.
- 4 Cups of Seedless Watermelon, cubed
- 2 Cups of Frozen Pitted Cherries
- Juice of 1 Lime
- Small Handful of Chopped Mint (about ¼ cup)
- Combine all ingredients in a blender and blend until smooth.
- Pour mixture into popsicle molds (you could also use dixie cups or an ice cube tray) and freeze for 6-8 hours or until set.

And I agree – it’s time to take advantage of the life we live and the loved ones around us. Hearing my dad’s co-workers speeches at his retirement dinner last night, and how they said that all he talked about was his family, made me realize how darn important family is.
