This simple salad is the perfect side for your 4th of July feast. It’s delicious, festive and incredibly easy to throw together with only 5 ingredients and taking just a few minutes to prepare.
Happy July friends! I honestly can’t believe I’m saying that right now. Where has the year gone? Did June even happen? How is the 4th of July already upon us?
Sorry for bombarding you with questions. I just can’t believe how fast time is flying by. Before we know it, we’ll be heading into Labor Day weekend with pumpkin spice everything shoved in our faces. I know, I’m holiday hopping and need to slow my roll. I tend to get a little ahead of myself.
Coming back to the here and now, since it is still summer in all it’s glory (and my palette isn’t ready for pumpkin spice) let me drop another salad recipe for you right quick. I know, I’ve been all about the salads lately ie: this kale summer salad, gluten-free pasta salad and healthier wedge salad. Sorry, I’m not sorry because they are all delicious. ‘Tis the season to get our salad on.

Tell me, how do you feel about watermelon? I personally, love it and assumed everyone did. That is, until I met my boyfriend who doesn’t like watermelon. Then discovered one of my close girlfriends doesn’t like watermelon. I just don’t understand. Is this whole people not liking watermelon situation a thing? Or are they extreme outliers? I’m going to go ahead and say the latter.
I mean, come on. This is what summer is all about.
This watermelon salad is beautiful, delicious, festive and EASY. Super easy. You may even have all the ingredients on hand! I did when I came up with it. So if you’re running late, need a quick recipe at the last minute or are a little challenged in the kitchen and need something foolproof – I’ve got your back.
- 6 Cups of Watermelon, Cubed
- 1½ Cup of Fresh Blueberries
- ⅔ Cup Feta Cheese Crumbles
- ¼ Cup Champagne Vinegar
- 1 Bunch of Fresh Mint, Chopped
- In a large bowl, toss the watermelon in the apple cider vinegar.
- Add blueberries and feta, lightly toss until combined.
- Garnish with fresh mint and serve immediately.

Never have I ever tried champagne vinegar. Need to get on that! And I’m loving the looks of this salad. So FRESH!
I highly recommend the orange champagne muscat vinegar from Trader Joe’s – SO good with the watermelon!

How do you get the white background/empty background? Is this through your camera lense or with an editing program or both?
Hi Hillary! For the white background photos, I typically shoot on a white foam core poster board. Sometimes depending on the angle, there will be a bit of my table or window in the shot, so I crop that out when editing.
I must be one of the outliers!! I hated watermelon growing up but have tried it as an adult and it is ok. Maybe this salad will change my mind!!
