Happy Tuesday! I hope your week is off to a wonderful start. I just wanted to pop in to share a super-easy packed lunch recipe that’s perfect for meal prep.
I know what it’s like to be really busy working at your J-O-B, as I work a full-time 9-5 just like you do. Sometimes (aka usually) there isn’t even enough time to leave your desk to eat a proper meal. Having almost your entire day spent in an office can really put a damper on maintaining healthy habits, which is why I’m all about packed lunches for work.
I can easily say I bring a homemade lunch to work 99.9% of the time and have found it is truly the key to fueling myself properly for the rest of the day. Packing myself a nutritious and delicious lunch gives me something to look forward to every afternoon, and helps me avoid the temptation of office junk. Or even worse – heating up a sad, over-processed frozen entree.
Here’s one of my personal favorites for an easy pack and go lunch: Zucchini Noodle Salad with Spicy Peanut Sauce. It’s easily customizable, and keeps well all week long. Plus it makes me feel all sorts of trendy eating zucchini noodles out of a mason jar.
- 1 Zucchini, Spiralized
- ⅓ Cup Carrot, Shredded
- ⅓ Cup Red Cabbage, Thinly Sliced
- 4 oz. Shredded Cooked Chicken or Sliced Tempeh
- Peanut Sauce:
- 2 Tablespoons Natural Peanut Butter
- 2 Tablespoons Rice Vinegar
- ½ Teaspoon Coconut or Liquid Aminos
- ½ Teaspoon Sesame Oil
- ½ Teaspoon Honey
- Generous Dash of Red Pepper Flakes
- In a small bowl, whisk together the peanut butter, vinegar, aminos, sesame oil, honey and red pepper flakes. If it seems too thick, add a teaspoon of warm water to thin. Add the sauce to the bottom of a mason jar.
- Next, add the cabbage in an even layer. Then place the carrots in an even layer on top of the cabbage followed by the zucchini noodles.
- Top with chicken or tempeh.
- When ready to eat, shake up contents to get dressing evenly distributed, or pour salad into a separate bowl and toss.

Yum! I just brought a mason jar salad to work yesterday. The only problem is I didn’t have a big enough plate to dump it all out on and it made a huge mess but it was so worth it. This peanut sauce looks awesome.

peanut sauce is the best! i’ve only used it for rice rolls, but as a salad dressing is an awesome idea!
